Unfortunately, due to the relative newness of this industry, your company may not have the expertise to support such a project so as to achieve its maximum potential. At this point you could:
1. Try to implement your own, with the help of your coffee or equipment supplier. Caution: Unless they have operated their own successful similar espresso concepts, it may be difficult for them to implement a concept that will satisfy the customers (speed of service, proper preparation techniques for better taste) and generate the kind of revenues that would merit further investment. A disappointing performance may be embarrassing, and slow down your enthusiasm for future concept expansion.
2. Implement a licensed or franchised operation. Though this may be a viable alternative, the drawbacks may be the cost of the project, the royalties, and the lack of flexibility. Besides, we have found that many such projects generate only a portion of their potential revenues, due to ineffective marketing and drink preparation techniques, especially in new, "uneducated" in espresso areas.
3. Develop your own, with your suppliers and our expertise. In the last twenty five years, besides having opened and operated our own espresso bars within the largest universities, we have provided initial "expertise and inspiration" to some of the greatest players in this field. We will show you how to develop a highly productive, competitive and desirable espresso concept, or improve substantially the performance of your present one, without changing your coffee or equipment, and regardless of any supplier or franchise you may be working with. In our own past coffee bars, our espresso bean usage ranged from 110-230 lbs. per week per store, averaging around 37 drinks per pound, or aprox. 5000-9000 drinks for a five day week.
